Shrimp Pesto Pasta Salad

Monday night after work I came home to find Parker in the kitchen ready to cook us a real, proper dinner

Parker is an excellent cook when it involves anything with red meat, so I think we were both a little nervous to see how this non-red meat dish would come out

The Ingredients:
1 pack of tri-color rotini pasta
1 jar of pesto
2 bell peppers
1 carton of mushrooms
1 large tomato
1 sack of shrimp

All you have to do is:
- cook the pasta
- chop the bell peppers, mushrooms and tomato
- saute the shrimp with the chopped veggies from above in a little olive oil
- serve with pesto when everything is done

there you have Shrimp Pesto Pasta Salad!


I am so very happy and proud to report that it was absolutely delicious!!

It reminded us of the Louisiana Pesto Pasta Salad we ate at Napoleon House in New Orleans  this past spring 

and that is a huge compliment, because that was one of my favorite meals we had in New Orleans that weekend


We set the table, pored ourselves a beer and put on Pandora for a little ambiance (also, just to drown out the constant barking of a little chocolate puppy named Leo)

It was a perfect way to end of very long Monday at school and work
